Can we ever have abilities like a jellyfish or hydra?

Is it even feasible that science (especially with stem cell research) may one day be able to make us biologically immortal,or at least regenerate lost or damaged limbs or organs?If we did ever reverse our cycle of life like an adult jelly fish to a polyp,would be instantaneous?
